Ravioli

1 1/2 lbs. ground round
3/4 bunch spinach
1/4 bunch parsley
1 onion
1 c. grated Romano cheese
1 c. bread crumbs
3 slices bread, soaked in broth
1/2 branch rosemary
1 sprig thyme
1 tbsp. sage
2 cloves garlic
5 eggs
1/2 tsp. allspice

Pasta

2 cups 00 flour (about 350 grams)
2 large whole eggs

Note: 00 is a fine flour with a lower gluten content than all-purpose flour. If you don't have this on hand, use all purpose flour instead.
To prepare the mixture by hand, place the flour on a clean counter top or rolling board and make a well in the center.

Break the eggs into the well and using a fork, beat the eggs, gently drawing in flour from the sides. Continue dragging flour into the center well, stirring the ingredients together until the dough begins to form a homogeneous mass.

Begin kneading the pasta, first sprinkling the surface with flour. in which to put the eggs. Then beat the eggs with a fork and gently mix in the flour from the sides. Start mixing the ingredients together until the mixture becomes homogeneous.

IMPORTANT: If the pasta is too dry or crumbly, spray with a little lukewarm water. When the right texture has been reached, form a ball and leave to rest under an inverted bowl for 10-15 minutes.

If making noodles, roll out the dough using a roller pasta machine, dusting lightly with flour to prevent from sticking. Fold up and roll a second time, or continue to roll each sheet until it becomes smooth.

Once the pasta sheets begin to smooth out, decrease the roller setting by 2 numbers, and then again by 2 numbers, until the sheets are the thickness that you require for the product that you're making.

Use the pasta sheets to make ravioli, lasagna, or roll up the sheet jelly-roll fashion, and slice to desired width to make noodles (or use the cutter attachment of your machine).

For a variation to this dough, add one teaspoon good olive oil for each cup of flour, and one teaspoon salt for each 2 cups flour. For a chewier pasta, replace 1/2 cup of the flour with semolina flour. To make a higher protein pasta, replace 1/2 cup flour with soy flour or high gluten (or balancer) flour. Adding high gluten flour also has the added benefit or reducing carbohydrates. To make an oriental noodle, substitute 1/2 cup of the flour with 1/2 cup of rice flour or potato starch.

In any of these substitutions, adjust liquids accordingly in order to have a dough of the proper consistency for rolling out.

You can add color to the dough by adding drops of beet juice (for red), spinach juice (for green), carrot juice for orange/yellow or squid ink for purple/black!

Apple Coffee Cake



APPLE COFFEE CAKE (DIET)

1 c. pancake mix
1 c. finely chopped apple
1/3 c. oil or melted butter
1 egg
1/2 c. sugar twin (or 3 tbsp. substitute)
1/3 c. milk

Combine pancake mix, sugar twin, and apples in bowl. Beat oil, milk, and egg together. Add dry ingredients; blend well.
Pour into 8-inch square pan. Sprinkle with spicy topping on batter. Bake in 375 degree oven 25-30 minutes. Serve warm.

SPICY TOPPING:
1/8 c. brown sugar twin
1/4 c. pancake mix
1/2 tsp. cinnamon
1/4 tsp. nutmeg
2 tbsp. soft butter
6 chopped nuts

Mix together in a bowl. Blend until appearance is coarse meal. Sprinkle on batter and bake.

Turkey Sausage


Ingredients

2 Tbls onion powder
2 Tbls thyme
2 Tbls oregano
2 Tbls ground sage
3 tablespoons quick rolled oats
2 teaspoons dried parsley
1 teaspoon salt
1 teaspoon pepper
1 pound ground turkey
1 Tbls crushed red peppers
1 egg white


Directions:

In a small mixing bowl combine the dry ingredientas. In a medium mixing bowl beat egg white with a fork and combine with the turkey. Add the onion and spice mixture and mix well. Spray a large skillet with vegetable oil spray and preheat to medium heat. Shape the turkey mixture into patties and cook over medium heat for about five to eight minutes. The turkey mixture turns white as it is cooked.

Cilantro




Coriander, Cilantro, Coriandrum sativum - Fresh cilantro, is also called Chinese parsley. Fresh cilantro has an assertive culinary personality. Even in the smallest quantities, it makes its presence felt. No one asks, "What is that subtle flavor?" It has a piquant taste, that is acquired. A rich source for vitamins C and A.
Cilantro grows as a slender, upright annual to 3 feet high. Leaves that emerge on its main stems are oval with toothed edges. Leaves growing on upper side branches are more lacy and delicate, resembling those of anise or dill.



As the season warms, a central flower stalk branches into beautiful, umbrella-shaped clusters of small, off-white, mauve or lavender flowers. Seeds are inside tiny round fruit that splits in half when dried. Fresh seeds have an unpleasant, musty, bedbug odor. Dried seeds have a pleasant, orange-spice aroma and flavor that increase with maturity.

Tomato Sauce with Red Wine



2 tablespoons olive or vegetable oil
1 large onion, chopped
1 (15-ounce) can tomato sauce
1 (6-ounce) can tomato paste
1/2 cup dry red wine
1 teaspoon dry oregano leaves
1 teaspoon dry basil leaves

Salt to taste

Heat oil in a wide frying pan over medium heat; add onion and cook, stirring often, until softened, about 5 minutes.

Stir in tomato sauce, tomato paste, wine, oregano and basil. Bring to a simmer; then simmer, uncovered, for 10 minutes. Season to taste with salt.

Makes about 4 cups sauce.

Louisiana Home Style Chilli


4 - 5 pounds of ground beef
4 cans of Bush chilli beans
2 cans of Rotel tomato
4 large onions
3 bell pepper
1 pound bacon
5 tablespoons chilli powder
4 tablespoons cumin
2 tomatoes
2 garlic gloves
3 cups chicken stock or broth
4 tablespoons brown sugar
2 jalapeno - sliced
1 tablespoon cayenne pepper
4 bay leaves
1 teaspoon oregano leaves
3/4 cup corn mesa
3 tablespoons paprika

Fry bacon. Slice into small squares and set aside.

Brown ground beef in bacon grease. Season with some cumin, chilli powder, salt and pepper. Add to six quart stock pot together with chilli beans, Rotel tomatoes and bacon.

Fry diced onions and bell pepper then blend in with the beef mixture. Add sliced tomatoes.

Add the chicken stock.

Your gonna cook this for hours on low heat. I recommend placing a cast iron pan under the stock pot to keep the stuff on the bottom from scorching.

Cumin, paprika and chilli powder. I begin adding these after about and hour. Then slowly begin adding more of each ingredient until I get the taste I want. You can start with the specifications listed above but as you cook more of it you learn to blend the favors to your tastes. I think I have more cumin than most recipes. Be careful with the cayenne you can ruin the whole lot.

I happen to like chilli to be a little thick. That is why I have more corn mesa than most recipes recommend.

This chilli does not have any rules. Hell it even has beans in it. I don't want to send any of the Chilli Society over the edge but it goes great over rice too.
